Paella
This mighty beast was found at the local Portuguese festival. It has three cousins, each in a different stage of absorption sitting out back. I'm not usually down with paella, I have had a few ordinary dishes, often dry and clunky, and have found that once you nail the muscles, the taste doesn't vary all that much. This paella was a re-education in everything the dish should be.

I've really gotten into cooking in my last few months in Sydney. The MC House Speciality; we've nailed asparagus and bacon risotto.
